1 Sanderson Farms Party Wings Value Pack (5 lbs.)
Salt
Coarse ground black pepper
Onion powder
Garlic powder
Smoked paprika
3% Brine
1 gallon water
1/2 cup kosher salt
1/8 cup sugar, granulated
4 each bay leaves
2 each garlic cloves
1 tbsp coarse ground black pepper
Alabama White Sauce
1 cup Duke's mayonnaise
1 tbsp course ground black pepper
1 tsp salt
3 tbsp lemon juice
2 tbsp white vinegar
2 tbsp white sugar
2 tbsp fish sauce
1 tbsp horseradish
Directions
- Brine chicken wings for 12 hours, up to 24 hours.
- Remove wings from brine and pat dry.
- Liberally season wings with salt, pepper, garlic powder, onion powder, & smoked paprika.
- Smoke wings at 250°F for 30 minutes. Increase the temperature of the smoker to 375°F. Flip wings every 20 minutes until 165°F or greater temperature is reached by a calibrated thermometer.
- Toss wings in white sauce.
- Enjoy!

- Combine all ingredients in a stock pot and bring to a boil.
- Remove from heat and let aromatics steep for 30 minutes.
- Strain and refrigerate until use.
Alabama White Sauce
- Combine all ingredients in a mixing bowl.
- Refrigerate for a minimum of 4 hrs but 12-24 hrs is recommended.
