Garlic Chicken Farfalle with Broccoli
A simple easy to make meal that's both delicious and nutritious.
Ingredients
2 Sanderson Farms® Boneless Skinless Chicken Breast Fillets, diced into 1/2-inch dices
¼ teaspoon salt
⅛ teaspoon ground black pepper
2½ cups fresh broccoli florets
2 Tablespoons water
6 Tablespoons olive oil, divided
6 garlic cloves, peeled and thinly sliced
⅛ teaspoon crushed red pepper flakes
1 cup grape tomatoes, halved
3 cups cooked farfalle pasta
¼ teaspoon salt
grated Parmesan cheese (optional)
Directions
1. Season chicken with ¼ teaspoon salt and black pepper.
2. Steam broccoli. Place broccoli florets in a microwaveable dish with two Tablespoons water. Cover with plastic wrap and pierce a few holes to vent. Microwave on high heat three minutes.
3. Heat 3 Tablespoons olive oil in a 12-inch skillet over medium high heat.
4. Add garlic slices and crushed red pepper. Cook 1 minute.
5. Add chicken dices. Brown 4 minutes, stirring constantly.
6. Add the remaining 3 Tablespoons olive oil and steamed broccoli florets. Stir and cook 1 minute.
7. Add tomatoes. Stir and cook 1 minute.
8. Add cooked pasta and ¼ teaspoon salt. Stir and cook 1 minute.
9. Chicken should reach an internal temperature of 165°F.
10. Serve with grated Parmesan cheese on top.
