Ingredients for Chicken

1 family pack Sanderson Farms Party Wings

1 cup cornstarch

canola oil for frying

Ingredients for 3% Brine

1 gallon water

1/2 cup kosher salt

1/8 cup granulated sugar

4 bay leaves

2 garlic cloves

1 tbsp coarse ground black pepper

Ingredients for Sauce

2 tbsp unsalted butter

2 cups soy sauce

1 lime juiced

1/4 cup fresh Garlic, minced

1/2 cup honey

3 tbsp oyster sauce

cornstarch slurry (2 tbsp. cornstarch, 3 tbsp. water)

Directions for Wings

  1. Brine the wings for 12 hours, up to 24 hours.
  2. Remove the wings from the brine and pat dry.
  3. Coat the wings in cornstarch, shaking off excess.
  4. Preheat oil to 365F.
  5. Fry the thai basil until just crisp, about 1 minute. Remove the basil from the oil.
  6. Fry the chicken wings until crispy and 165F internally (about 12-14 minutes)
  7. Toss wings in the sauce and fried basil. Enjoy!

Directions for Sauce

  1. Melt the butter in a skillet on medium heat. Add in the ginger, shallot, thai chilis, and garlic. Saute until slightly softened. Add in the soy sauce, honey, lime juice, oyster sauce, and cornstarch slurry. Allow to simmer until thickened.
