¼ cup finely chopped celery
1 cup halved, seedless red grapes
½ cup sliced almonds
¾ cup mayonnaise with olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
1. Bring water to a boil in a 6-quart stockpot. Add chicken and cook 18 minutes or until chicken reaches an internal temperature of 165°F. Drain. Dice chicken.
2. In a medium size bowl, combine cooked chicken, celery, grapes, almonds, mayonnaise, salt and black pepper.
3. Chill and serve.
