
Grilled Crispy Rice Chicken Salad

A homemade ginger peanut dressing ties it all together for a dish that feels special but comes together quickly.
Grilled Chicken
3 Sanderson Farms Boneless Skinless Chicken Breasts
Olive Oil
Salt and Black Pepper
Crispy Rice
1 tbsp chili crisp oil
2 tbsp soy sauce
1 tbsp sesame oil
2 cups leftover jasmine rice
Salad
2 avocados
1 cup shredded carrots
1 cup edamame
1 bunch green onions, thinly sliced
1 bunch cilantro, chopped
1 english cucumber, thinly sliced
1 red bell pepper, julienned
1/2 cup red cabbage, jublienned
Ginger Peanut Dressing
1/2 cup olive oil
2 tbsp toasted seasme oil
4 tbsp soy sauce
2 tbsp rice wine vinegar
2 tbsp maple syrup
1 tbsp grated ginger
1 tbsp grated garlic
1/2 lime, juiced
2 tbsp peanut butter
Grilled Chicken
- Coat the chicken breasts in olive oil & liberally season with salt and black pepper.
- Heat a skillet to medium-high heat.
- Sear the chicken breasts on both sides until they reach an internal temperature of 165F or greater.
- Remove the chicken from the skillet and allow them to cool.
- Cut the chicken breasts into ½ inch chunks.
Dressing
- Add all of the dressing ingredients to a blender and blend until fully incorporated.
Crispy RIce
- Preheat your air-fryer to 400F.
- In a bowl add the rice, and remaining ingredients. Toss to make sure the rice is evenly coated.
- Add the rice to a lined air-fryer basket in a thin, even layer.
- Cook the rice for about 8 minutes. Then stir the rice so that the bottom layer can crisp.
- Cook the rice for an additional 2 minutes. *you may have to cook the rice in a couple of batches, remember to cook it in a thin, even layer to achieve optimal crispiness*
Salad Assembly
- Add the salad ingredients to a large bowl.
- Add the crispy rice to the bowl.
- Add the chicken to the bowl.
- Add the dressing to the bowl.
- Toss all ingredients until fully incorporated.
