CRISPY LEMON CHICKEN WITH ANGEL HAIR PASTA

Ingredients for Chicken

4 Sanderson Farms Boneless Skinless Chicken Breasts (cut in half horizontally)

salt

pepper

garlic powder

onion powder

flour

Panko Breadcrumbs

Ingredients for Sauce Items

1/4 cup olive oil

1/4 cup butter

1/2 cup chicken broth

1/4 cup fresh lemon juice

1/3 cup dry white wine

1 shallot, minced

zest of 1 lemon

salt & pepper

Optional Garnish

chopped parsley

grated parmesan cheese

Directions

  1. Season both sides of the chicken breasts liberally with the salt, pepper, garlic powder, and onion powder.
  2. In one shallow bowl, add the flour and season with the same seasonings used for the chicken. In another bowl, add the 3 eggs, cheese, and water. In the final bowl, add the panko breadcrumbs.
  3. Coat each chicken breast in the flour, shaking off the excess. Then coat the chicken in the egg mixture, then into the breadcrumbs. Press the breadcrumbs onto the chicken to ensure adhesion.
  4. Set aside on a wire rack.
  5. In a large skillet, add the olive oil and butter. Heat on medium heat until butter is melted and slightly bubbling.
  6. Add the chicken breasts to the skillet and cook for about 6-8 minutes on each side until 165F internally. You’ll have to cook the chicken in batches to ensure they’re golden brown and cooked through.
  7. To make the sauce, in a skillet add 2 tbsp of olive oil and shallots. Cook the shallots until translucent. Add the chicken broth, lemon juice, and lemon zest, and white wine. Bring to a simmer and reduce the heat slightly. Add in the cold butter and whisk until fully incorporated.
  8. Add the chicken breasts to the skillet and spoon the sauce over the top of the chicken. Let simmer for an additional 2 minutes. Season with salt & pepper to taste.
  9. Serve over buttered angel hair pasta.
