Zaatar Broiled Chicken Leg Quarters
Keep a watchful eye over the leg quarters once you have glazed them and they’ll come out crispy and savory. The Zaatar blend is reminiscent of a good curry but earthier and pairs beautifully with the sweetness of the carrots and molasses glaze. Adding a touch of lime juice works to brighten the entire dish.
ZAATAR BROILED CHICKEN INGREDIENTS
4 Fresh Sanderson Farms® Chicken Leg Quarters
2 tablespoons Zaatar spice rub
Salt and pepper to taste
MOLASSES GLAZE INGREDIENTS
1 cup molasses
1 teaspoon lime juice
1 tablespoon Soy Sauce
1 tablespoon Zaatar spice rub
Salt and pepper to taste
REMAINING DISH INGREDIENTS
2 cups carrots, cleaned and cut into 1” chunks
1 cup shallots, halved
1 tablespoon cilantro
1 tablespoon scallions
ZAATAR BROILED CHICKEN DIRECTIONS
1. Combine leg quarters, Zaatar spice rub, and salt and pepper in a Ziploc bag or Tupperware. Shake to evenly coat the quarters.
MOLASSES GLAZE DIRECTIONS
1. Combine all ingredients in a non-reactive bowl and season with salt and pepper to taste.
2. Reserve for glazing leg quarters.
REMAINING DISH DIRECTIONS
3. Preheat an oven to 425°F. On a sheet pan or roasting pan, roast the leg quarters for 15 minutes, skin side up.
4. Add carrots and shallots to roasting pan and roast an additional 30 minutes or until the leg quarters are >165°F and the juices run clear.
5. Brush leg quarters with the molasses glaze and broil an additional 1-2 minutes or until glaze is sticky and caramelized.
6. Remove from oven and allow the leg quarters to rest 5-10 minutes before serving.
7. Sauce with additional glaze and top the quarters, carrots, and shallot with cilantro and scallions to taste.
