BBQ Chicken Pizza

INGREDIENTS

12 Sanderson Farms® CHICKEN TENDERLOINS

Salt and pepper to taste

2 tbsp canola oil

FOR PIZZA ASSEMBLY

3/4 cup barbecue sauce

1-12-inch prepared pizza crust

1 ½ cups shredded mozzarella cheese

1/4 cup chopped scallion

1/2 cup red onion

1/2 cup drained pineapple tidbits

1/4 cup torn basil

Directions

1. Preheat oven to 425°F.

2. Season chicken with salt and pepper to taste.

3. In a 12-inch skillet over medium-high heat, add 2 teaspoons of canola oil. Add chicken and cook for 6 minutes on each side or until chicken reaches an internal temperature of 165F. Remove chicken and set aside.

4. Dice chicken and place in a bowl.

5. Place pizza crust on a sheet pan or pizza stone. Spread the barbecue sauce evenly on top of the crust. Top the sauce with mozzarella cheese, red onion, diced chicken and pineapple tidbits.

6. Place in oven and cook for 10 minutes. Then, broil for 2 minutes or until cheese is melted and crust is a golden brown. Top with chopped basil and chopped scallion. A little parmesan, red chili flakes, or hot sauce are great on this as well.
